Butcher block is a hunky boy. that is usually 3+ inches thick and stays put (often used as a countertop or standalone table) These are more for th eprofessional meat processor.

Well it largely falls on aesthetic preference. We don't use wood species that wouldn't make a good cutting board. Maple is hard a pretty, cheery has a tight grain and is light, oak is antimicrobial, walnut is dark and strong but all perform equally well.

No. All you need to do is not let food sit on them, when done using, wipe off with soap and water, then immediately dry to keep board in proper working condition.
